As a Chef, I have years working in kitchens for all kinds of outlets (Restaurants, Hotels, Employee Cafeterias of Government and Corporations, Dining Services of Universities), as well as Hospitals.
I moved from Buenos Aires, Argentina, to Columbus, Ohio, USA, to finish my Chef training. The possibilities of success here were much better, so my wife and I decided to make Columbus, Ohio our place to grow our family.
I have been following The Paleo/Primal lifestyle for about 10 years now and have become a Primal Health Coach.
A Paleo lifestyle is not only about what you eat; it has to do with all other aspects of your life: how you exercise, how you sleep, how you relate with others. From the food standpoint, the Paleo/Primal community believes, through scientific evidence, that we, as humans, have not been adapted to all grains (especially the ones containing Gluten) and legumes to an extent; consequently, we do not consume them and argue that these are some of the main causes of our health troubles of nowadays. We believe that our diet should consist of Good Fats (Coconut oil, Avocado oil, Fish oil, Extra Virgin Olive oil and Grass-fed Butter and Lard, Suet Tallow or Duck Fat), as our main ingredient, supplemented with vegetables, and proteins. These Proteins should be from pasture-fed animals, wild caught fish, and game.
Keep in mind that 80% of our Health depends on what we eat.
